Happy, tasty and healthy salad

This is a refreshing and colorful summer salad full of protein, exotic flavors and herbs. This salad is inspired by the Senegalese salad named “niébé” salad part of the culinary tradition of Senegal. It is light, healthy, easy and tasty and provides all essential nutrients. 100% vegan and authentic

Black-eyed pea, an ancient crop, is also called cow peas is a legume native to West Africa. Known for its rich protein content , it is widely used across Africa, America and certain countries in Europe. It is also the symbol of the ties between Africa and its diaspora. In Brazil, fried cakes are made of them, called “acarajé” which are also made in Nigeria and Senegal under the name of “acara” or “akara”. The peas are also consumed in Southern United States and they are said to have been brought in America by slaves on ships.

Ingredients:

  • 50 g of black-eyed pea (to soak in water overnight)
  • 500 ml stock
  • 1 Red and 1 yellow peppers
  • Cherry tomatoes
  • 1 boiled plantain
  • chopped mint leaves
  • chopped parsley leaves

baobab vinaigrette:

  • 1 tsp of Superfood of Africa baobab fruit powder
  • 1 tbsp of honey
  • 1 tbsp of olive oil
  • 1 tbsp of water
  • 1 tsp of salt
  • pepper
  • chili flakes (optional)

Preparation:

  1. Cook the peas in 500 ml stock for about 30-35minutes (until soft). Let it cool
  2. Cook the plantain in water until soft. Let it cool and cut into small pieces
  3. Chop all the ingredients
  4. Prepare the vinaigrette by mixing all the ingredients together

Mix everything and drizzle the vinaigrette and the chili flakes (if you want it spicy!). Put on your sunglasses and enjoy the sunshine (on the plate)!
