Fonio smocked mackerel salad

Ingredients:

  • 120 g de fonio
  •   1 cup of water
  •  1 tbsp of olive oil
  • 100 grams of smocked mackerel
  • 50g cherry tomatoes
  •  50g sweet red pepper
  • 1 shallot
  • 3 okra (optional)
  • Pomegranate seeds
  • dill, mint

The dressing : 1 tbsp of baobab powder, 1 tbsp of extra virgin olive oil, 1 tsp of honey, salt and pepper

Preparation:

  • Cut the okras in small pieces, put them in a pan with 1 tbsp of olive and salt and sauté them. Put aside
  • Wash the fonio and add in a saucepan with the olive oil  and salt and add 1 cup of water. Let it cook with the lid on for 10 min. Let it cool
  • Prepare the dressing by mixing 1 tbsp of baobab powder, 1 tbsp of olive oil, 1 tbsp of honey, 1 tbsp of water. Add  salt and pepper to taste
  • Mix the fonio with all your salad ingredients, place the smocked makerel, herbs and the dressing
  • Et voilà !
