Fonio smocked mackerel salad
Ingredients:
- 120 g de fonio
- 1 cup of water
- 1 tbsp of olive oil
- 100 grams of smocked mackerel
- 50g cherry tomatoes
- 50g sweet red pepper
- 1 shallot
- 3 okra (optional)
- Pomegranate seeds
- dill, mint
The dressing : 1 tbsp of baobab powder, 1 tbsp of extra virgin olive oil, 1 tsp of honey, salt and pepper
Preparation:
- Cut the okras in small pieces, put them in a pan with 1 tbsp of olive and salt and sauté them. Put aside
- Wash the fonio and add in a saucepan with the olive oil and salt and add 1 cup of water. Let it cook with the lid on for 10 min. Let it cool
- Prepare the dressing by mixing 1 tbsp of baobab powder, 1 tbsp of olive oil, 1 tbsp of honey, 1 tbsp of water. Add salt and pepper to taste
- Mix the fonio with all your salad ingredients, place the smocked makerel, herbs and the dressing
- Et voilà !
