Granola is perfect for breakfast, snack and even as a dessert for those with a sweet tooth like mine. the fonio grain is so small that you won’t even realize they are there. They are small but mighty! Rich in protein and fibre they will keep your gut healthy while providing you with energy.

This one is special as it is made with shea butter, the royal butter of Africa. The shea butter used is of superior quality (grade A). Feel free to use coconut oil or cocoa oil as these are easier to find.

Ingredients :

  • 60g of Superfood of Africa fonio
  • 50g of pecan nuts
  • 10g of shea butter or coconut oil
  • 2 tbsp of honey/maple syrup/agave syrup
  • 50g of seeds (mixed of pumpkin and sunflower seeds)
  • 30g of dried cranberries
  • 1 tsp of salt

Preparation:

  1. Mix the fonio with the rest of the ingredients. Mix well. Place on a baking sheet, in the oven for 20 minutes until lightly golden.
  2. Let it cool for 1 hour and store it in an airtight jar. You can use it up to 2 weeks or in a sealed freezer bag for 3 months
