Ingredients (about 15 croquettes):
- 1 ripe plantain
- 60g of cooked fonio
- 100g of shrimps
- 1 egg
- breadcrumbs
- 1 shallot or 1/2 onion
- 2 garlic cloves
- chopped parsley
- salt, pepper
Dipping sauce : 1 tbsp of mayonnaise, 1 tsp of sriracha sauce, 1 tsp of honey, 1/2 tsp of salt and mix it all
Preparation:
- Cook the fonio (wash it, add 1 cup of water, 1 tbsp of olive oil, salt and place for 3 min in the microwave)
- Boil the plantain until soft
- In a frying pan, add 1 tbsp of olive oil, add the chopped shallot, the garlic and stir until the shallot is translucid
- Add the shrimp
- Add salt and pepper to taste
- In a bowl, mix the preparation in step #2 with the cooked fonio, the boiled plantain, the egg and the breadcrumbs and mix everything until you form a consistent dough
- Scoop with a teaspoon and form a ball shape and roll into breadcrumbs
- In a frying pan, add 1 tbsp of olive oil and fry the balls until they have a golden color
