The fonio grain is extremely versatile and this porridge is the perfect example of that versatility. This porridge has a creamy texture that disappears in the mouth. The pear, caramelized with honey and lemon juice, the raspberry and the blueberries add a tangy flavor contrasting with the soft and creaminess of the fonio.

Gluten-free – Low in sugar – simple.

Ingredients :

  • 60g of Superfood of Africa fonio
  • 250 ml of milk (dairy-free or dairy milk)
  • 1 tsp of vanilla extract
  • 2 tbsp of honey (or agave syrup)
  • 1/2 tsp salt
  • Juice of 1/2 lemon
  • 1 pear
  • seeds and fruits for toppings

Preparation

  1. Wash the fonio and add it in a saucepan, together with milk, salt, honey, vanilla extract and let it simmer until all liquid is absorbed
  2. In a non-sticky pan, add the honey and the lemon juice and add the pear cut in half. Let is become brown (5 min is enough)
  3. Serve the porridge with the pear, toppings and the honey sauce from the pear.
