The fonio grain is extremely versatile and this porridge is the perfect example of that versatility. This porridge has a creamy texture that disappears in the mouth. The pear, caramelized with honey and lemon juice, the raspberry and the blueberries add a tangy flavor contrasting with the soft and creaminess of the fonio.
Gluten-free – Low in sugar – simple.
Ingredients :
- 60g of Superfood of Africa fonio
- 250 ml of milk (dairy-free or dairy milk)
- 1 tsp of vanilla extract
- 2 tbsp of honey (or agave syrup)
- 1/2 tsp salt
- Juice of 1/2 lemon
- 1 pear
- seeds and fruits for toppings
Preparation
- Wash the fonio and add it in a saucepan, together with milk, salt, honey, vanilla extract and let it simmer until all liquid is absorbed
- In a non-sticky pan, add the honey and the lemon juice and add the pear cut in half. Let is become brown (5 min is enough)
- Serve the porridge with the pear, toppings and the honey sauce from the pear.
